For this salad, just toss together:
- tomatoes of any type, cut to your own preference
- diced onion
- chopped fresh basil
- chunks of fresh mozzarella
- good quality extra-virgin olive oil
- balsamic vinegar
- salt & pepper to taste
Mix it all together and eat plain, or pile it atop slices of freshly toasted bread.
Doesn't get much better than that.
